sounds so good it may be on my menu soon. And then throw some of that gravy over mashed potato's. Mmmmm.

Speaking of mashed potato's, this last weekend I made mine that are raved about every time I do them.

Take 2 heads of garlic and cut top 1/4 off, coat with olive oil then hit with a light coat of salt and pepper. Lay cut side down and roast at 350 until brown and soft. When browned and soft pull out and let cool until you can handle then squeeze out the garlic and mash with a fork and set aside.

Bring about 2 lbs of baby reds to a boil in salted water and cook until done. Just before done bring 1 cup of heavy cream and 1 stick of unsalted butter up to heat to melt butter. When potato's are done drain off water and then return to pan and toss around over heat to dry off the water. Join potato's and cream and garlic and mash with a masher leaving some chunks for texture.

Either serve immediately or better yet IMO is put in crock pot on low for an hour or more to really let the flavors meld.
