Our local greenie eco-friendly hippy-dippy Whole Foods sells filets for about $24 a lb.

In the unlikely event that I ever see it at a sushi bar, I'll probably try it. Once fish is cooked, IMO, none of it is worth $24 a pound.

A soft, flaky texture and an almost buttery consistency in the mouth.

Raw yellowtail (hamachi) comes across as buttery to me. Buttery is a good attribute in a fish. For me, not for the fish.
