Here's a recipe for something I made two nights ago, it was the first time I made it, and it was incredibly delicious...

Heat up a 12 inch saute pan, then add enough EV olive oil to cover the bottom, get that good and hot...

Salt and pepper three boneless and skinless chicken breasts, then place the seasoned side down into the hot oil... don't move the chicken around, just leave it as you placed it... then season the other side as it sits in the pan...

Thinly slice up three medium size onions and put aside... it seems like a lot of onions, but it's not...

After a few minutes and the chicken is crisped on one side, turn it over, just a few minutes on each side...

After a few minutes on the second side, remove the chicken and place on a holding plate...

Then, toss in the pile of sliced onions and let them cook for about 10 minutes until they turn brown and nicely caramelized...

While the onions are cooking, tossing them every few minutes, squeeze the juice from four fresh lemons, you want about a cup of fresh lemon juice... also, slice the chicken into very thick slices, or leave whole... I sliced them so they would get more of the pan juices all over the meat...

Then add the lemon juice into the pan of onions, this will deglazed the pan and add incredible flavor to the sweet onions...

Add the three chicken breasts back into the pan either whole or sliced, cover with the lemon onions and cover for about another five minutes...
