I've been buying the whole wheat or whole grain brands recently. ANd yes, I have been known to consume 12 oz all by myself. I LOVE PASTA!!!!

Right now I am cooking a spaghetti squash, which I will eat with Promise and fresh grated parmesan.

Thank you for asking about my inlaws! ANother bad week. He started vomiting blood and then he tried to get up by himself and fell, and wound up in ICU. Tests showed he has an ulcer. (what next?) They will keep him a day or two and then send him back to rehab.
I have started gathering information on nursing homes in their area. I don't think she is going to be able to bring him home, and this is very very hard for both of them so they will need a lot of support, and maybe some intervention.

I am not convinced longevity is such a wonderful thing. CErtainly not once your health goes.

1. Ingredients

1. 1/4 cup mayonnaise
2. 3 cloves garlic, minced
3. 1 tablespoon lemon juice
4. 1/8 cup olive oil
5. 1 cup sliced red bell peppers
6. 1 small zucchini, sliced
7. 1 red onion, sliced
8. 1 small yellow squash, sliced
9. 2 (4-x6-inch) focaccia bread pieces, split horizontally
10. 1/2 cup crumbled feta cheese

2. Cooking Directions

1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
2. Preheat the grill for high heat.
3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.
