Refried beans.. What is that?

That is something I been working on from my first trip to baja in 1964.

What is with these sublime creamy beans I got with my huevoes rancheros.

I came back to the states, back to mexico.

I never could nail that bean thing down. Then my brother married a lovey latina. She tatk me how to cook pintos, and well with garlic and more stuff than i use today. Yet something was missing.

So, started thinking maybe it is some kind of fat. Then I added the bacon fat I saved on my decadent blt's. Nope, good, but not the real deal.

So now I have a ton a fat from cooking my carnitas. Which I dumped in the trash.

Could this be the answer to the best friolies?

But I just realised I do not like the creamy frijoles. That's why all the folks around me in Oxnard are 50# overweight, even the kids.

So, beans are good. Garlic is good. See my early ref.

2 cups of pintos, wash, no soak. clean and pick. lots of garlic. salt and real pepper. 3x water, hard boil slow simmer. add water as needed.

That sounds really good.

I think the discolored beans are easier to find when they are wet. Like rocks, you see the color better when they are wet- imo.
