I used about 1/2 large chicken breast from the leftovers and cut it into 1 inch cubes. Added 1 stalk of celery, sliced, 2 tablespoons of blue cheese dressing and 4 tablespoons of mayo. This went into the small food chopper I have in 2 batches and processed until chunky but not reduced to a paste. It is a a chicken salad sandwich filling to die for.... my wife's words. I love it also.

Try it sometime - you will love it. Do not use the onions.... save them for something else. I already started my focaccia dough and it will be ready in a couple of days. It is a sourdough.
