John C sent it to my email this morning.

Sounds a little like my:

Oven Puffed Pancake

1/2 cup flour
1/2 cup fat free milk
2 T sugar
1/4 t salt
1 lg egg
1 lg egg white
1 T butter
Powdered sugar (optional)

Preheat oven to 425 degrees
Lightly spoon flour into a dry measuring cup: level with a knife
Combine flour and next 5 ingredients, and stir till moist
Melt butter in a 10" cast iron skillet over med heat. Pour batter into pan: cook 1 minute (do not stir) Bake for 18 minutes or until golden brown. Sprinkle with powdered sugar if desired. Cut into quarters, serve immediately.

What I like about your recipe is that you use 1/2 & 1/2.
