Soak your black eyed peas over night, drain and wash the following morning. Put the peas in a crock pot, add your water depending on how many lbs your cooking. Put you in as much fat back as you like, along with chopped onions, and some black pepper. Don't add salt. You gonna get enough from the fat back. If you prefer, you can add a ham bone, just make sure there's a little ham dangling from that bone.

Once it gets cooked down, about 5 hours, take some yellow mustard and squirt in a few table spoons. Again, depending on how much you're making. Stir in real good.
