I like pan fried chicken and burgers too.

To add to your useful suggestions, I suggest salting the meat well in advance of cooking.

For the chicken, consider "brining" in a solution of buttermilk with salt added. A few hours is all that is needed, otherwise the meat gets too wet to fry.

For the hamburger, consider using chuck meat cut into chunks, salting liberally overnight, and grinding it yourself. This is actually excellent.
