Yes............I know how they freeze their catch. Dad was a commercial fisherman. But in his early days when I would go out with him all he had was ice. I remember watching him down in the hold spraying the ice around as it came shooting out of the long tube the suppliers had.

I'm just teasing you, but I'd ask how long that piece of halibut has been in the deep freeze. Two to three weeks seems to be the limit if you want really fresh tasting fish. I'd bet you get it pretty soon after hitting the market there?

And I don't recall meeting anyone from the mid-west that like seafood.
