when I do chicken noodle soup in the crock pot, I use chicken wings. I break off and throw away the wing tip, but boil the wings with the skins on. I then take them out and skin them and debone them and cut it into bite sized pieces. Then I add all the veggies and noodles for the last 20 minutes, or so.

I think I would skin the thighs first, as there is still a lot of fat on a thigh for the flavor. The meat is delicious in soups.
