(I watched a local TV 'nature show' recently of some regionally famous guy, 'Shroom expert, taking folks on tours and point out all the different types of edible mushrooms found in the woods. He makes a good living collecting and selling rare types to high-end chiefs.)

From a gastronomic point-of-view, I was just thinking 'why, there must be 50 or more totally different edible types I've never had a chance to taste', because they are never available in stores.

The host and he then went on to grill some, make soup out of others, etc.

The wild thing was that even the Phd expert couldn't know what he would find when he went out into the woods --- said what was there for the picking was different all the time.
