Their economies where not extremely stable, they had upturns and downturns. Even hunter gatherers or primitive farmers have good times and bad times, and the third world wasn't just limited to such modes of living even before wide spread foreign investment.

In any case when your desperately poor you don't want an economy that's merely stable. You want to escape poverty and for a country to do that it needs to grow, not just be stable.
