I do if I'm going to be away for more than 3-4 days. Not so much to save energy, but to prevent leaks in the house while I'm outta town.

I do, not just to save the energy, but to keep the thing from blowing up due to a stuck thermostat and stuck pressure release valve. Sure it's rare. I had 187F water a couple years ago, +60 from normal. My pressure valve appeared to be working (a few dribbles out the release pipe).
