Agree totally, and would add that is the problem cooking all seafood. Over cooking is simple and inevitable if you haven't done it much. Course most people don't want seafood undercooked, so tend to go to the other extreme. A lot of seafood has been ruined by overcooking. Took me years to figure that out.

I figured out that when you can smell the shrimp they are done.

And have lots and lots of napkins around if you do the peel and eat shrimp. There is a lot of finger sucking and loud "yummmmmmm"s going on too. You might not be able to hear the game if you don't turn up the volume on the TV. -gg-
