I use the smell test for all seafood now. If it smells like cooked....fill in the blank........at a good seafood restaurant, it's done. I suppose you could tent it for the last few minutes if you are unsure. The stuff is so expensive I had to find out how to cook it right. Did some research and a lot of trial and error and now I think I do OK.

I could eat seafood every night, but someone won't let me.
