My grandmother's favorite for Salmon was to marinade in a mixture of Kikkoman's teryaki and honey. Let marinade for a few hours and then broil. You'd swear it was really, really moist lightly flavored smoked.

I like to blacken fish and in one of Paul's early cookbooks he gave the recipe for his blackening seasoning for fish. I will try and remember to post that tonight because then you can do what I do and eliminate the salt from the mix all together and add the salt on it's own to control the amount.
