Sorry to disappoint you, but I don't think Time Machine will help you with data lost by not saving your work. As far as I know, it doesn't back up open files.

Its purpose is to give you access to previous versions of saved files which you have changed later, or of files you've accidentally deleted or overwritten.

Excel lets you close a file without saving? Wow that's the dumbest thing I've ever heard. The usability standard is for the software to inquire if you want to save before closing a file.
