If you're the only one serving, it'll easily do 5-6. If I were doing 25, I'd just go 3x, not 4x. Presumably, you've got others lending even a small hand on mains or sides. Have I done 3x? No, but going "up", as I often do in most recipes to share, is more accurate than going "down". The proportional error of spices and ingredients is more forgiving when you go to the high side.

Just fix for 3x at most. That one dude who did the thing with a single fish and some bread in Jerusalem --- he made it work out. I think it was a 5000 dinner party. Your 3x Jambalaya should work out just fine. Probably have some leftovers. Which BTW, you can feel free to send *here* <ggg>
