You probably don't like them because every time you've had them they are cooked to death. I found that to be the worst problem. I carefully read each vegetable recipe that I want to try and follow it to a T. I've been doing that for many years, and cooking them right and well has become second nature to me.

I'm always on the look out for new veggie recipes, because if they are cooked properly they are wonderful.

We went to a pot luck wedding reception in Aug and one lady brought stuffed zucchini from her garden. Now that is one dish I've never made. Both my husband and I just raved about it. Makes me want to put in some zucchini next year..........but just one. If I do, I will scour recipes looking for what I think is the right combination.

Those stuffed zucchini were a full meal in themselves. Course we had to try everything, so only ate a bit. ;)
