Everyone also loved the flavor of the turkey and I also like this brine and use it on chickens also.

Apple Cider brine

2/3 cup Kosher salt
2/3 cup sugar
6 quarter size slices of fresh ginger
2 bay leaves
6 whole cloves
1t black peppercorns crushed
2t whole allspice berries crushed
8 cups unsweetened apple cider

combine and bring to a boil and let boil for 4 minutes stirring to ensure salt and sugar has been incorporated. Remove from heat and add 4 cups of ice cold water to cool. Put in fridge to get cold. Once cold put 2 oranges quartered into turkey cavity and put in brining bag and add brine then seal bag forcing out as much air as you can. Turn several times and brine over night.

When your ready to cook, remove from brine and wipe off bird removing any spices and remove orange quarters and cook.
