We are trying to avoid sugars and flours in our family, and I noticed your muffin recipe didn't have any flour in it. We're also doing a little experiment and going organic. So far it has been a really wonderful experiment. The food is so much more flavorful. A bit more perishable......you have to eat the whole avacado when you open it or it goes bad within hours....but knowing the food was grown in a chemical and hormone free environment is what is really appealing to me.

Everything we eat that is grown organically has been very, very tasty. It is amazing how much flavor is lost due to processing, chemical fertilizers, injections or additions of preservatives or chemicals that prolong shelf life.

So........what I'm getting at is..............I am going to try to make your muffins using all organic ingredients. I'll see if I can find an organic substitute for the brown sugar......if not I'll use raw. And you've given me the idea to add chopped dates.

Regardless of what I do, I know they will be very tasty.
