I do all my own cooking and I have experimented a lot. But when all is said and done, the little girl in the New Yorker cartoon had it right.

I don't know why cooks perfected the preparation of meats and sweets but ignored doing anything complex with vegetables?

English and American cooks used to do that. French and Italian cooks always treated vegetables well.

Raw, too.

A perfectly ripened Creole tomato with just a touch of sea salt is nirvana for me.

Perfectly steamed broccoli, i.e., just enough to retain a bit of snap, with some drawn butter and just a touch of garlic salt and a little lemon juice, is delicious.

Yams are terrific with minimum preparation, i.e., baked. Artichokes, of course.
