Well.........there you are getting several vegetables. Try taking a zucchini cut in half hollowed out. fry some hamburger and mix it with your ratatouille or a similar veggie mix then put it in the hollow of the zucchini and bake adding some cheese right before it's done and bake till it melts.

You could also make a lasagna out of the stuff in the ratatouille knowing you want to cut back on wheat using eggplant instead of pasta which I think is an excellent idea.

Eat lots of green, leafy salads and include broccoli and other veggies...........red peppers, red onion etc...add sliced meats, cheeses, hard boiled eggs.

Eat lots of beans prepared lots of different ways....

Do you like Brussels Sprouts? (probably silly question)
