You are forgetting distribution. A few companies like ADM control the distribution. They have a margin higher than the others in the chain. And because they have a much higher volume, they make the bulk of the profits.

In food manufacturing, transportation, preparation and distribution, what's the "critical task"?

The obvious critical task is the person who decides what food to manufacture, if at all. Nobody else can do anything until the decision is made. Laws certainly enhance this effect, by enforcing the position of that "decider" usually by some kind of ownership.
