OK and thanks. I was looking at the July/August issue of Cook's Illustrated last night and they had a section on "Freezing Summer Produce 101"

They suggested blanching 3 ears of corn at a time with husks and silks removed for 6 minutes. Then you immediately shock in ice water (adding ice as needed) for at least 1 minute. They said to lay 3 layers of paper towels on a baking sheet and then 2 more layers on top and gently dry. Then freeze in single layer on baking sheet for 1-2 hours then double bag in freezer bags.

They covered lots of other veggies, and that is the basic drill except the blanching and freezing in single layer times varied depending on which veggie you are preparing.

I am really looking forward to freezing some good corn.
