Everything that goes into my freezer has a date on it. I keep each type of product separated in grocery plastic bags, so it's easy to keep track of what's there. I also rotate stuff so I use the oldest first. I've take meat out of there that was about one year old, but the Food Saver kept it just as fresh as the day it went in. I have noticed that I'll have to wrap pork chops and T-bones in a couple layers of paper towels once they're frozen. It seems the bone often will puncture the Food Saver bag and it loses its vacuum. Then freezer burn will start to occur.
