Does anyone actually pan fry chicken anymore? I grew up raising chicken for eggs and food. My mother fried those things for Sunday dinner and they were delicious. The older hens became stewing hens with home made noodles or dumplings. To DIE for!!!

I confess to never doing any of the above anymore. I get my fried chicken at Albertson's (best store bot chicken anywhere). I also grill breasts outside, weather permitting, which it doesn't permit these days.

<<I was going to comment on the oil temp because every cookbook I've read tells me 350 to 375 and unless you are using 2lb chickens your going to have a very dark bordering on burned crust before your chicken is ever done. I actually run close to 300 and lid my pan at first to really get the stuff cooking.>>

Best I heard was 350 and the lid on for 6 minuted and off for 9 minutes. Flip the bird, and no this isn't driving, and another 6 and 9.

It really depends on the thick pieces like the breast - and it sounds like we agree.... 350 to 375 is way too hot. I learned that the hard way.
