Everybody knows you can't eat the stuff. Gold is just a vessel for you to carry your wealth in while the paper boat you were accustomed to using goes up in late stage flames. Eventually it will make sense to convert into a "new era" fiat of some type. Using it in the middle-time to buy a bottle of milk or a pound of chuck? No, probably not very practical -- but I'm talking about the need for a means of preserving personal millions, not hundreds or thousands.

So for trivialities and perhaps for a portion of your food, you're right, you would probably have to still carry some level of fiat around. But the objective would still to be to get rid of it ASAP -- in the end game of Weimar Germany people couldn't get to the bakery fast enough with their scrip wages before the prices went up again once or twice en route.

Post-collapse but pre-new era I personally envision a lot more barter occurring -- barter used to be eminently practical, e.g. paper money wasn't worth a whole lot to most people for everyday things in the old west either, and that wasn't really so long ago in the big scheme of things.

As for the authorities -- I think they will be exerting a lot less local authority after the fact, as they will have bigger and more serious national security issues on their plate. As such, black markets will thrive, as they always do in times of financial chaos -- with gold likely being the only "accepted across the board" medium of exchange.
