I guess I don't find the crust difficult and can whip one out in short order.

Flaky butter crust

1 1/4 cup sifted flour
1/4 t salt
1 t sugar
7 T of butter cut in chunks
3/4 T of water

Add the first 4 to the food processor and process until it looks like crumbs. Add water and pulse until dough pulls together then remove and form into a disc and refrigerate for at least an hour or as much as 24. Roll out on a floured surface and whalla.

You can also use 1/2 cup of chunked up lard instead of the butter.

This is from memory since I'm at work but I am pretty sure I'm on.
