I can say its the only universe we know exists. But you are free to believe in a multitude things unseen if you wish.

With planets, we are going to find thousands of them, and it will become pretty clear that only a few of them are suitable for life,

We already know that from our own solar system.

If we only knew of one planet, the Earth, people could also claim the earth was uniquely designed for us.


Irrelevant. The universe needs to be as big as it is (and thus needs to have a bunch of stars and planets which don't directly support life) in order for life to exist here or anywhere else it may.

the multiple universe theory, which originally was not well received, is much better accepted now.

Not because we can perceive the multiple (actually infinite) universes. But because its people are realizing its either believe in an infinity of unseen universes or believe in an unseen intelligent designer. And people make their choice.

Oh BTW, there is still an issue with the infinite universe hypothesis - what is it that generates the infinity of universes? Something certainly, but what? A universe generating machine, maybe.
