A bookie needs only lay off non matching bets. The matching bets can be held at no risk. The "vig", or the amount over the nominal bet owed by the loosing bettor is risk free profit. The manager of these instruments needs not buy nor sell any gold to cover this transaction, but can invest the proceeds of the sales to you. Think this works in all similar pairs?
