You can strain out the particulates. If you allow the stock to cool the fat will come to the top where you can pour it off. It does make it more tasty to leave it.

Slow simmer it for 4-8 hours, strain the particulates, I usually cool it overnight in the fridge then skim the fat. Then use it or freeze it.
