As usual, there's a middle ground. My local natural foods store sells grass-fed beef with a short feedlot finishing period...

Feedlot Time & Ration

Short (89 day average) feedlot/finishing period after 12 – 18 months of native range grasses, seeded pastures and hay. The feedlot ration is based on alfalfa, potatoes and grain. O.C.B. has reduced the typical grain usage 80% (corn) to approximately 30% (corn & barley) in our program. Feedlot activities are focused toward keeping the fat in the muscle (marbling) at the High-Select/Low Choice level. Tests show that a more desirable ratio of Omega 3 Fatty Acids to Omega 6 were obtained with our feeding program than with other, longer corn-fed programs.
