choose the rent/mortgage for a property large enough to hold horses as the housing component;

At least on this one, it is partly because economists don't seem to view asset appreciation as inflation.

As far as I know, many (most?) people would rather be eating organic food rather than what they get off the regular supermarket, just as they would have had 100 years ago.

We eat more organic food than we did a generation or two ago. Perhaps less than 100 years ago but that doesn't mean that the quality has decreased. Organic doesn't equal quality, non-organic doesn't equal poor quality. Food is generally of higher quality and available in greater abundence and higher diversity than 100 years ago.

They'd also would rather to have a property large enough to hold a few horses, just as they would have had 100 years ago.

Farmers and ranchers would have a property that large. Most others would not. Of course most people where farmers or ranchers in the past, but that we hardly an easy life. They had a less diverse diet, smaller houses, no modern conviencnes. What they did have was generally of lower, often far lower quality.

People work less hours now than 100 years ago. The only way they would have had more time to spend with their kids 100 years ago was if they worked with their kids.
