African game meats are also very tasty, especially kudu and ostrich.

Wild meat is not marbled like beef, and has a very low fat content. The fat that it does have is unpalatable.

It takes a knowledgeable cook to do wild meat well. It burns or turns to leather easily because of the low fat content. Best is to get one of those little wire grills that open up like a clam and grill them over an open fire in the dark. That's how I found out that wild meat is best cooked rare. <<

The best moose I had was cooked by my then mother in law. She oven roasted the meat, and then used the drippings for an unbelievable gravy. At least I think that's what she did. It's been a long time.

Either way, I have never had meat of any kind that tasted better. I could go for some of Ingrid's älg kött right now. With tiny red potatoes (ny potatis) and green beans. And lots of swedish butter. Yum.
