So water crackers, water crackers with salt, water crackers with sesame seeds, water crackers with black pepper and water crackers with garlic constitute diversity to you?

The constitute greater diversity than just have water crackers, with and without salt.

But water crackers are not the point. The increased diversity is much greater than that. The amount of complex mixing of all the ingredients and different ways of preparing them is far more extensive, and also there are additional ingredients that simply where not widely available (or in a few cases available at all) generations ago.

For an example of what I'm talking about here is a guide to restaurants in my area run by an economist at a local university.

When I was born, or even when my brother who's half my age was born, there wasn't anything like that diversity of choices here, or just about anywhere else in the US.
