The constitute greater diversity than just have water crackers, with and without salt. But water crackers are not the point. The increased diversity is much greater than that. The amount of complex mixing of all the ingredients and different ways of preparing them is far more extensive, and also there are additional ingredients that simply where not widely available (or in a few cases available at all) generations ago.
