Was I cheerleading for the food industry? No. What I did was say that more diverse foods where available.

And the increase in ethnic restaurants isn't the only way food diversity has increased (even if its one of, arguably THE biggest)

I doubt that the Chinese food in your local eatery is recognizable as Chinese food by the Chinese eating a traditional diet.

Most Chinese take out places don't exactly over highly traditional Chinese food, but its still an increase in diversity, and you probably can find some relatively traditional food, at least if you live in, or go to a large city, and make the effort.
