Pacific salmon stop eating when they enter fresh water, and start metabolizing their fat. By spawning time they tend to be in poor condition, so I doubt you'd find them delicious. The fishery is managed so that sufficient salmon escape to spawn. If too many fish spawn, it can actually be detrimental to the survival rate of the young.
