If you are a chicken or a pigeon, no problem. They can swallow the entire grain.

The problem with grains is that they are stable, as long as the protective shell is not broken. Once broken (when flour is made in a mill), it becomes unstable. The oils contained inside go rancid.

So a lot of food processing tricks need to be employed one way or another, whether it is to get rid of parts of the grain that go rancid (making it no longer "whole grain"), or somehow managing the whole grains in other ways.

IMO, chances of anything that's sitting on a supermarket shelf being 100% whole grain are infinitesimally small.

As far as glycemic index, yeah, it is important, but it needs to be viewed in context. While the glycemic index of individual food components is known, what really matters is the glycemic index of the entire meal and the glycemic load of the entire meal. In this context, the differences between "whole" and "white" grain start to diminish.

Overall, I think people have been sold a bill of goods on this "whole grain" stuff, as if it was somehow a virtuous thing. What it really is is just a grain, and if you really want virtue, limit grains of all kinds (whole or not).

Looking at the page on grains in South Beach Diet that you linked:

That's what it actually says: limit grains of all kinds greatly, avoid some all together. It does not say "Go out and eat whole grains". Besides, it says "No starches or grains at all in Phase One" - which is the intervention (theraputic phase).
