The people you buy the materials from will come out with a truck with a conveyor belt/crane that will put the underlayment and shingles right on the roof.

Not if they are doing tile on a two story. The poor SOBs have to carry that shit up ladders.

You can just lay new shingles over an old roof, up to 3 layers.

That was true when I lived in Illinois also... but not true here in Florida. For some unknown reason they always take off the old roof and when they put up a new one.
