They also have granite benches. I thought it was just a cunning way of storing food = just place the food on it, with a cover over it. Leave it for a while and the radiation kills all the bacteria etc and the food can then be stored for a long time.

By keeping fruit right there on the counter-top, it is constantly irradiated so lasts much longer, though the water still evaporates and it dries. But dried fruit is good as a back-up for a rainy day.
