can also try it as a muffin. i use a little wheat flour.. but mostly oat bran, eggs whites, applesauce. add cinnamon good portion, some fruit optional, baking soda,, no salt. results in one heavy muffin.

bill, if you like the flavor of coconut you can purchase a coconut 'flour' and make muffins out of them....the texture isn't quite like a regular muffin, but i've made them with ground pecans and also blueberries....they're a good substitute for people who feel they 'need' a muffin or toast in morning with their coffee or tea... the they don't taste like you're eating coconuts, but there is a definite coconut flavor
