Don't know anything about walnut oil, but walnuts themselves are delicious sprinkled through your salad. And of course the olive oil and vinegar add further benefits.

Edit: I'll search sometime for some links on walnut studies, but I recall seeing one controlled study where the addition of
6 walnuts a day to one's diet conferred some significant protective effect against strokes and other cardiovascular events.
