Starchy vegetables that are not white,

"Don't eat white" is a good motto. As a veggie hater, like most of us, I have found a few I like. I love braised spinich. Will have some today by cooking minced garlic and sliced onions for about eight minutes in a skillet, then add a lot of fresh spinich until it wilts. Then a dash of soy sauce and hot pepper sauce with salt and pepper.

I also take the basic garlic and onion base, then add cubed eggplant and zuccini, a can of diced tomatoes and some mushrooms. soy, pepper, salt and pepper. Eat it hot or cold with parmesan.

For me, the secret with veggies is "strong flavor." You can't have too much garlic. Buy it minced in a jar at costco. Don't add it on nights I dance. :>)
