I don't think they know enough dietary science to teach it.

It is clear that the meta studies of the Lyon Study, the 1990 Elderly diet study, the Framingham study, and the 7 Countries study along with some basic bioscience are starting to open doors to the acceptance that yes, types of fat matter, and matter greatly, and certain vegetables can make an enormous difference to blood chemistry.

It is high time this knowledge filtered down to the CMA/AMA/FDA and they can start to realize that diet is such an important part of the Rx, that certain foods should be in prescriptions and proscriptions as well. Then they can trash the Dash diet and take a serious and sober look at the Atkins diet as well. The Atkins may well be dangerous to health. I would have not problem telling a heart patient that he can starve himself except for some fruit juices, nuts, carrots and celery for 3 weeks. Telling him to go on the Atkins diet, I might as well hand him a loaded revolved and invite him to play roulette.
