The butchers about a mile from me used to do mainly custom slaughter, you bring the cow or pig in and they butcher it. Now there are very few cows raised in my area and about 250,000 hogs raised that now go to packing plants. They are now buying top grade carcases and processing them.What makes them a little different is you might also find yak, buffalo, frog legs, ostrich and alligator there from time to time. Alligator has been the big hit, they get 500 pounds in and it's gone that day.
