There is nothing like seafood cooked Cajun style. Shrimp and crab etouffee, boiled crabs and shrimp in Zataran boil, fried speckle trouts and red fish using Zataran frying mix, stuffed red fish using ground up shrimp, oysters, and crab meat for your stuffing , Shrimp barbecue,........ Then we move to the freshwater fish such as sac-a-lait, brim, bass...etc. I live fifteen minutes from Henderson Swamp where these fish are super abundant. What a blessing!
