Steve, a humanoid with limited capacities could have evolved and God came along and modified it in terms of brain capacity and began endowing each new life with a soul.

Or God could have simply created the chemical soup from which life sprang, leaving the life forms on their own to evolve.

I will say, though, that in my experience I've never met anyone in the evangelical circles of people I know who were dead set on creationism and rejecting of evolution. They were trying to reconcile religion and science in their own way. Sometimes I think the preachers in those fundamentalist churches feel captive to preach that hard core form of scriptural interpretation, but most of the congregation is sitting there thinking 'yeah, whatever'. The point being that the membership is more curious and open to questioning things than you might think.

I didn't quite follow what you mean by the antibiotic statement?? Evangelicals certainly use modern drugs and medical procedures like everyone else, and docs and nurses come from their children. They have no animus to science per se, just would like to have school children presented with the alternate concept that God may have created man.
