Because they don't eat too much? That would be my guess.

And perhaps, at least for the Japanese, because they eat lots of fish and veggies with it.

Plus they eat it plain. And with vinegar, as in sushi, which counters the glycemic effect. My idea of the purpose of rice is for sopping up curry, butter, and the rest of the lovely, fattening sauces we put on them. Not quite comparable,nutrition wise.
